Renart Montalat, president i conseller delegat de Vichy Catalan Corporation, han presentat <em>Water Cube<\/em>, el primer dispositiu per a l\u2019hostaleria que, un cop instal\u00b7lat, far\u00e0 possible que els establiments serveixin als consumidors el millor caf\u00e8 espresso del mercat.<\/p>\n<p>Desenvolupat conjuntament pels departaments d\u2019I+D+i de Vichy Catalan i de Caf\u00e8s Cornell\u00e0, el nou sistema possibilita un subministrament d\u2019aigua de qualitat superior directament a la m\u00e0quina de preparaci\u00f3 del caf\u00e8 de la cafeteria. D\u2019aquesta manera, el dispositiu uneix el caf\u00e8 fresc de Caf\u00e8s Cornell\u00e0 amb l&#8217;aigua mineral natural Manantial de Sant Hilari, empresa de Vichy Catalan Corporation.<\/p>\n<p>Amb <em>Water Cube<\/em>, a partir d\u2019ara l\u2019espresso que se serveixi en establiments d\u2019hostaleria tindr\u00e0 unes propietats organol\u00e8ptiques \u2013de sabor, aroma, cos, acidesa, impressi\u00f3 global&#8230;- que seran molt superiors a les de la mitjana del mercat.<\/p>\n<p>Per explicar la import\u00e0ncia de l\u2019aigua en la preparaci\u00f3 del caf\u00e8, Joan B. Renart ha recordat que \u201cl\u2019aigua representa el 92% de la tassa de caf\u00e8 i, per tant, l\u2019\u00fas d\u2019una aigua inadequada t\u00e9 un impacte negatiu directe molt rellevant en la qualitat de cada tassa\u201d.<\/p>\n<\/div>\n<p><strong>Hostaleria: m\u00e9s valor afegit i qualitat<\/strong><\/p>\n<p>Segons els seus impulsors, amb <em>Water Cube<\/em>, l\u2019augment de qualitat del caf\u00e8 que se servir\u00e0 en l\u2019hostaleria donar\u00e0 lloc a una superioritat en sabor que vincular\u00e0 la beguda a la gastronomia del caf\u00e8 i que s\u2019alinear\u00e0 amb la tend\u00e8ncia creixent d\u2019un consumidor que exigeix major valor afegit a les noves cafeteries.<\/p>\n<p>En aquest sentit, Pere Cornell\u00e0, director general de Caf\u00e8s Cornell\u00e0, ha manifestat que \u201camb el temps, el caf\u00e8 ha deixat de ser quelcom mec\u00e0nic i funcional i ha evolucionat cap un producte gourmet\u201d; i ha afegit que \u201cavui, el consumidor es preocupa m\u00e9s per la bona qualitat, el sabor i la manera de servir aquest caf\u00e8 que en \u00e8poques anteriors\u201d.<\/p>\n<p>Aquesta exig\u00e8ncia de major qualitat del caf\u00e8 que se serveix a la cafeteria contrasta amb la percepci\u00f3 negativa que el consumidor t\u00e9 de l\u2019acte de consum de caf\u00e8 fora de la llar. Diverses enquestes posen de manifest que les expectatives de prendre un bon caf\u00e8 fora de casa s\u00f3n encara molt baixes. En concret, un 65% dels consumidors no confien en arribar a prendre un bon caf\u00e8, en el canal hostaleria.<\/p>\n<p>En aquest sentit, segons Josep M. Rubio, president de la FEHR (Federaci\u00f3 Espanyola d\u2019Hostaleria i Restauraci\u00f3), <em>Water Cube <\/em>\u00e9s una resposta directa per combatre aquesta percepci\u00f3 negativa del consumidor final ja que, \u201camb el nou dispositiu, Caf\u00e8s Cornell\u00e0 i Vichy Catalan s\u2019han unit per contribuir a maximitzar la satisfacci\u00f3 d\u2019aquest consumidor final en un acte, tan quotidi\u00e0,com \u00e9s el de prendre un caf\u00e8\u201d.<\/p>\n<p><strong>M\u00e9s valor afegit i qualitat pel consumidor<\/strong><\/p>\n<p>Les dues empreses estimen que els establiments potencialment interessats en el dispositiu s\u00f3n, necess\u00e0riament, aquells que tenen la vocaci\u00f3 d\u2019orientar-se a la satisfacci\u00f3 del consumidor final, a trav\u00e9s de l\u2019aportaci\u00f3 de valor afegit i qualitat. En xifres, aquest tipus d\u2019establiments representa un 5% del total.<\/p>\n<p>Els promotors del nou dispositiu preveuen que, en cinc anys, <em>Water Cube <\/em>generi una facturaci\u00f3 de 52 milions d\u2019euros en les cafeteries que l\u2019incorporin. En la primera fase de comercialitzaci\u00f3, es preveu que s\u2019instal\u00b7lin unitats de <em>Water Cube<\/em> en 150 punts, principalment de Catalunya. La promoci\u00f3 de l\u2019\u00fas del dispositiu es focalitzar\u00e0, especialment, en aquelles \u00e0rees on l\u2019aigua de xarxa representi una oportunitat rellevant.<\/p>\n<p>En termes inversors, un cop cobert el 5% del mercat, el nou dispositiu haur\u00e0 comportat una inversi\u00f3 de 1,2 milions d\u2019euros.<\/p>\n<p>Pere Cornell\u00e0 ha destacat que \u201cper consolidar el dispositiu, seguirem el model de taca d&#8217;oli\u201d i ha assenyalat que \u201cconfio en que la incorporaci\u00f3 dels joves, a partir dels 16 anys, com a consumidors habituals de caf\u00e8, contribueixi a fer cr\u00e9ixer el projecte\u201d.<\/p>\n<p><strong>Repetici\u00f3 i fidelitzaci\u00f3 del consumidor<\/strong><\/p>\n<p>Per a Joan B. Renart, conseller delegat de Vichy Catalan Corporation, \u201cla repetici\u00f3 i la fidelitzaci\u00f3 seran les que sustentin el projecte i que facin possible que el producte no s\u2019encareixi pel consumidor\u201d.<\/p>\n<p>Segons Pere Cornell\u00e0, director general de Caf\u00e8s Cornell\u00e0,\u201csi els professionals de l\u2019hostaleria adopten el m\u00e8tode espresso, el nou dispositiu augmentar\u00e0 en un 20% el rendiment del caf\u00e8\u201d. El director general de Caf\u00e8s Cornell\u00e0 ha subratllat que \u201cgr\u00e0cies al consum d\u2019aigua de qualitat superior, a partir d\u2019una mateixa quantitat de caf\u00e8,es poden preparar un major nombre d\u2019espressos, en comparaci\u00f3 amb els que es poden fer si es recorre a aig\u00fces de qualitat inferior\u201d.<\/p>\n<p>Per la seva banda, Josep M.
